I am not sure I get the drift of this dialogue but if you mean why do
AUSCARs go clockwise and NASCARs go counter-clockwise then it is
because the AUS is RHD and the NAS is LHD.   If this is not what you
were talking about then just ignore me.

I think Sondog was having a bit of a joke about the effect that makes
water spiral out of sinks differently in the other hemisphere. Or at
least, that's how I read it.
