I'm looking for a very open driving game like Motocross Madness 2 but
with baja type cars instead of motocross bikes. Does this exist?

The games that come to mind are Insane, 4x4 Evolution 1 and 2, Screamer 4x4,
and the old Monster Truck Madness 2.  4x4 Evo 1  has the advantage of
hundreds of user-made addon trucks and tracks (Evo 2 has the same potential,
but as the track editor was just recently released, there aren't so many to
choose from.)  In terms of truck handling and any attempt to come somewhere
near real-world physics models, Insane and Screamer 4x4 do much better than
MTM2 or the 4x4 Evo series (which don't even attempt to replicate anything
remotely 'real world').  I think you can download demos for all of the above
games. MCM2 is better than any of them as an overall package, IMO, so don't
get your hopes too high.

Does anyone know if they ever patched the Paris-Dakar Rally game?

It was recently run, and televised, and when that game was announced I was
e***d, but then it turned out to be mostly an arcade game that was in bad
need of patching.

Off road baja type game?

Not quite a full game (in terms of tracks) but there is a mod for
Nascar Heat called "Baja Beasts". You can run them on any
of the original NH tracks or the 50-60+ add-on tracks that
have been developed (quite a few dirt ovals).

The best (for Baja) is Desert Thunder. The physics are
spot on, much better than anything else I've tried.

You might want to try 4x4 evolution (1 or 2) or Test Drive Off Road.  IMHO,
4x4 Evo has the best graphics for a 4wd game and there are millions of
add-on trucks and tracks.  Hope this helps.
