 I have a TM Sprint Steering wheel
(no jokes please) and when I set the "control device" to Joystick1
to enable the steering wheel - then try to redefine the buttons on
the wheel the program gets stuck on the redefine screen - cannot
get out of it without quitting the program.

I'll accept I'm stupid - but the manual doesn't seem to tell me
what I'm doing wrong

The "problem" is that you have inadvertently assigned multiple functions to
the same button. The *real* problem is that the game won't let you assign
some functions to the keyboard while using a wheel / joystick. The
work-around is to ignore the functions you don't need. Select them, then
press the space bar and it should show <none> as the button assignment. You
will definitely need the 'Burn Out' and 'Hand Brake' functions, so be sure
to assign these to buttons on your wheel. Good luck...
