I have posted a rudimentary schematic of a joystick in
alt.binaries.pictures.  Any self respecting radio-shack geek ;) can sort
out any questions.

I used a spring attached to the bottom of the steering wheel hub pulling
straight down to provide self-centering and increased resistance with
increased rotation of the wheel.  A sturdy bearing is necessary to keep
from destroying the potentiometer.  To have separate gas and brake pedals,
hook two potentiometers in series, one at one end of its travel, the other
at the other end.

I used *** tubing to make flexible couplings to further reduce strain
on the potentiometers.  Plates of aluminum bolted to spring-loaded hinges
make good gas and brake pedals.
