They already do this. Some of us drive slower than they do. :)
The one thing I really want is probably impossible to implement. Right
now, it is all but impossible to drive a very loose setup because of
certain missing feedback paths. For example, you can't feel impending
oversteer in your pants. By the time you see it on screen, it's too late
to correct.
I watched in envy as some of the AI drivers twitched their way around
Sonoma. It occurs to me that fly-by-wire systems allow dynamically
unstable aircraft to hold apparently steady flight paths. AI drivers
have the same advantage of near instantaneous reaction time and
digitally precise feedback.
I would like to see some indication of slip angle at each end of the
car, perhaps as color bars at the top of the screen. The top bar would
represent approximate slip angle at the front tires, the bottom the
rears. The larger the slip angle, the longer the color bar extends from
the center. Understeer would be visible as a long bar away from the
turn. Oversteer would also be a long bar away from the turn. A four
wheel drift would be both bars in proportion away from the turn.

PS. While watching replays last night, I thought I saw the little dude's
hands moving on the wheel. I would swear I can see his little white
gloves turning the wheel to the right for right hand turns. A couple of
cameras at Sears Pt look almost straight down at the oncoming car as it
enters a turn. It might be track banking that causes this illusion, but
it looks for all the world like he was turning the wheel. Has anyone
else noticed this?
