I read posts about people having problems to get pots for their
wheels...well, maybe I can help: walk to the next GUITAR store and ask for
tone or volume pots. They might be slightly more expensive there, but still
better than a weekend without a working wheel...

I also don't get the point why the pots HAVE to be 100k. According to my
technical knowledge (forgive me if I'm wrong) ANY pot up to 500k should
work.

Not sure about the latter, but the first worked for sure.

 Umm, Those are audio taper pots. I may be wrong but I think
joystick/wheel pot are linear taper. It may work though. I know from
experience that if you you put linear taper pots on someones guitar,
they will show up a day later and say: " take these damn pots off of
my guitar right now!!"

I dont know either. I though it was 100k to 250k. I know that 1m ohm
makes windows freak out.
