Well, like the title implies......

I can't for the life of my figure out which buttons to press to skip
warm-ups without the computer taking control of my car,

must you post a time in all sessions or am I pressing the wrong buttons?

The buttons at the bottom from left to right go... Just hold your mouse
over them. There's a main menu, finish session, next session, garage,
and drive button. And you can skip sessions. Then obviously there's the
accelerate time.

"Take control", you're by any chance referring to the installation
lap? You don't drive that one yourself, unfortunately.
Either turn it off in the preferences or just hit the spacebar once
you're in the***pit.

But after Qualifying is over, I move on to warm-up, fine, but I usually skip
it,
but when I use either mvoe to next session or finish session buttons I am
not able to drive my own car in the race, its like I have aborted the GP.
