Which wheel for taking to bits?

I'm adding a little twist to the most popular question on this NG.  What
wheel gives the best feedback?  Basically, I am transforming a car into a
simulator.  I'm going to buy a wheel to attach to the steering column.  This
means I won't notice how plastic it feels, or what it looks like.  I'm just
interested in what it's like to use.  I'm not interested in pedals either,
as I'll be adapting the ones in the car.  Also, any clues from people who've
mounted their wheels to other mechanisms would be appreciated.  I'd rather
not go down the route of removing the steering column and grafting a wheel
onto the dash!
