Along these lines, is it possible to edit the mirror so that rear of the car
isn't visible, but the same scale retained??

Basically, a multi pane mirror that allows driver see all the way around.
Better than we have in N3.

I've downloaded the latest beta for N3 and found the option to change the
type of rear view mirror.  Being a Brit who hasn't seen much Nascar recently
(as Sky/Eurosport seem to have stopped showing it) I was curious as to
whether the five element rear view mirror was realistic.  What type of rear
view mirror do real Nascar's have?

They use a very wide convex mirror, so the new one is a reasonable
facsimile--in that you can see almost 180 degrees in the mirror.  Although
the real ones are usually divided into three panes (like the regular N3
mirror), the image you see in the new mirror is way better and closer to the
real thing.

The default setting for that convex mirror is actually 200 degrees. you
could
set it to 360 if you wanted to be weird. :)

it isn't really divided into 5 panes, it's a single pane and it makes a
vague attempt to render the interior of the***pit. Since the field of
view is so wide we put that***pit interior in there so you could have
a visual reference for determining where a car was in relation to you.

I think the real nascar drivers use a very wide mirror that is like 1.5
-
2 feet wide, and the middle part of it is flat like a normal mirror but
the sides are convex. And they see the interior of their cars in the
mirror, but textured, instead of just black :)

Thanks for explaining that.  Now that you've pointed out that the bars are
the frame of the car, the mirrors make much more sense.
