It depends wjay sort of racing you are after, but Nascar Racing 2003
is excellent and has a great tutorial.

Live for Speed is probably as good a way to start as any, plus it's cheap
and there is a free demo.  Take a look at http://lfs.racesimcentral.com/.

You can't go wrong with "Live for Speed"  A fine sim with cars of the sort
that you may have real world experience with to get you started.

And N2003 is awesome :)

The TA mod (NR2003) in particular is very forgiving when you aren't
on the edge (hence a newbie won't be spinning down the track every
other turn).  F1C with all aids turned on is pretty easy too, but I'm
not sure if you will learn the right lessons with that sim: TA isn't
too bad for a new driver with no aids, so you'll learn to react to
what the car is telling you (via sounds, visuals, and FF).   Just
remember to not nail the brake pedal to the floor when braking,
and not to punch the throttle when you are sideways in a turn.

I was eased into the world of sims via Need for Speed: Porsche Unleashed.  
It's a bit of an older title, though.  I guess these days "Live for Speed"
would be a better choice.

    I also say NFS5.  And be sure to try the World Racing demo!  My
NFS5-junkie friends in Europe say this game is fantastic!

Fantastic is the word.  Just installed the full
version and it is, well, fantastic.  Huge maps,
fun rides (particularly like the 196) and pretty
decent (adjustable) physics.  Good time!
