What game are you talking about?  It can be done easily in GPL or NR2003/2
as they are close enough to reality that you just do what you would do in
real life (rev the snot out of the engine, drop it into 1st gear and use a
bit of brake to hold your position or at least slow you down--of course if
you don't have a controller with split axis [independent] pedals, don't even
bother trying).  Don't try it in most other titles, though, unless you want
to be frustrated.

Unless you are Drag Racing, it serves no purpose other than to prematurely wear your rear tires out. :-)
