Is there a way to edit the N 2002 entry list and schedule to create an IROC
schedule? In N 1-3 scheduling could be re-edited but I haven't seen like
that in a while. Any help/ suggestions?

IIRC its an INI file that any text editor can read. Check in the season
folder.
