That's a good question! In the great majority of games, hardware mode
is *much* better (try playing GPL in software mode and you'll see what
I mean). But GP3 is a bit odd - it has a superb software engine, which
on some cards is actually faster than the mediocre hardware engine.
THe only way to tell for sure is to try both of them, and see which you
prefer.

In very simple terms: hardware mode is using your 3D card to help with
the processing; software mode isn't.

What is it meant by hardware mode, and software mode, I am completely lost,
whats the difference?
Marco
so which one is better to use, in GP3

software, because I dont think any other game I have played had this option,
however GP2 was the last racing game I bought for computer.

Yes.

GP2 was produced before the days of 3D cards. Then there was a couple
of years when new games supported 3D cards, but also had a good
software option. Now a 3D card is more or less compulsory, and many
games won't run at all without one. GP3 is very unusual among recent
games (other than those using voxels, but I don't think any racing
games do) in having a very good software engine. It's a shame the
hardware engine isn't better, though.
