Just got a Logitech MOMO to try and wondered if it is best to use the
software or to not use it with GPL. or does the driver require the
profile software to be installed?

Um... What I always do is install the software from the wingman team
site, then disable the profiler from automaticly starting on bootup.
I never use the profiler, theres no need, unless you want to assign
buttons on the keyboard to buttons on your wheel.
I do the same. I loaded the drivers (beta) and then disabled the profiler
at start up. Now when I go to Game Controllers (XP), select my wheel (in
this case a LWFF), and choose Properties, I can adjust at will with the new
look configuration screen. I must say the Logitech Wingman drivers are
pretty nice, with the ease of configuration and stuff. Thrustmaster's
drivers were a headache.

I was even able
to use my old pedals with the new wheel. I find this wheel to be much
better for me than my old ACT Labs Force RS (sorry Raymond!). It is
just so much smoother. I can see some of my GPL Rank going down
already :-)

Momo's (at least the early one's, not sure about one's in the pipeline now)
have a mechanical off-center that can only re solved with the latest
versions of the Wingman software.
There's no reason not to use it. Other than the scattered preferences, it's
about the best controller software out there.

enough to understand that when I run VROC and go into a race, that I
am in GPL, so it does not give me the setting that I set in the
profiler. Do I just set it to the default setting? I didabled the
profile software and then used RBJOY and it worked great, I did not
notice the off-set center, I will have to look at that.

You have to make a profile for gpl.exe AND a profile for gpllaunch.exe
(found in the winvroc folder).

I've occasionally encountered this off-center issue with the Logitech
Wingman Formula Force GP and a few other Logitech devices when the
profiler isn't loaded. I've also have a game -Sports Car GT- that
won't recognize my wheel with the profiler loaded. I had to replace my
Wingman GP after a year with a new 2nd generation Wingman GP and
rarely have the centering problem without the profiler. From what I've
read and heard the same seems to be the case with the 2nd gen of MOMO
wheels. The only advise I can give is just try it either with or
without the profiler for each specific game to see what works best. If
I unload the profiler I usually have to recalibrate my GL wheel unless
I re-boot.
My experience with Logitech is that they always make improvements
with updates of their Wingman Software/drivers and 2nd gen releases of
their hardware. So far I've never regretted upgrading to new versions
of the Wingman software; taken my 3 year old gameport Interceptor
throught 4 new updates so far.
